Easy Lunch Recipes For a Healthy Vegan Lunchbox

It's great to live the Vegan Lifestyle. The food is delicious and your creativity in the kitchen is challenged in a pleasant way. At home it's no problem to prepare a healthy lunch. But the average canteen at work doesn't sell healthy Vegan lunches or snacks. So the only thing you can do is take your own food with you.

To give your creativity a boost I have some great Vegan lunch ideas for you! I provide you with very easy recipes you can prepare before leaving for work and take along in your lunchbox. Make your co-workers jealous! Maybe you inspire them to eat healthier!

Pappadums
Pappadums

Pappadums are delicious crispy Indian pancakes made of Lentil Flour. You can buy them ready made or make them yourself. It's easy!

Cook time: 1 hour 15 min
Ready in: 1 hour 15 min
Yields: 4 Pappadums

Ingredients

  • Blender/Food Processor
  • Oven
  • Baking Tray
  • Baking Paper (optional)
  • 2 cups of Organic Lentil Flour
  • 1/4 Tablespoon minced Cumin
  • Pinch of Sea Salt
  • Pinch of Pepper
  • Pinch of Garlic (optional)
  • Little bit of water

Instructions

  1. -Put the Lentil Flour, Cumin, Sea Salt, Pepper and Garlic in your blender/food processor.
  2. -Mix it all together adding drops of water till you got a smooth dough (don't use too much water!)
  3. -Knead the dough in 4 small balls
  4. -Roll out the dough balls on a baking tray (you can use baking paper to prevent the dough from sticking to the tray)
  5. -Bake the rolled out doughs in the oven at 100°C for 1 hour.
  6. Done!
  7. You need Pappadums for the Indian Lunch Salad below!

Mouthwatering Raw Indian Lunch Salad - Served With Pappadums

This lunch salad is delicious and so easy to make. I use Pappadums for it. See above for the homemade recipe or order your ready made Pappadums online (you find the link below this recipe).

Yields: 1 Yummie Lunch Salad

Ingredients

  • 2 Pappadums
  • Rinsed Lettuce
  • 1 Tomato
  • 1/2 peeled Cucumber
  • 1/2 Avocado
  • 1 small Spring Onion
  • 1 Pickle
  • 2 Tablespoons Tahini
  • 2 Tablespoons Lemon Juice
  • 1 1/2 Tablespoon Powdered Curry
  • 1 Tablespoon Raw Honey
  • A small pinch of Cayenne Pepper or Chili Powder
  • Pinch of Sea Salt

Instructions

  1. -Put the Pappadums in your lunchbox
  2. -Rinse and Chop the Lettuce
  3. -Spread Lettuce over the Pappadums
  4. -Slice the Tomato, Pickle, Cucumber, Avocado and Spring Onion and put on top of the Lettuce
  5. Finishing Touch: Make a yummy dressing:
  6. -Stir the Tahini, Sea Salt, Powdered Curry, Cayenne Pepper or Chili Powder, Lemon Juice and Raw Honey
  7. -Spread your fresh and delicious dressing over the salad
  8. Enjoy your mouthwatering lunch!

  • 1 Frying Pan
  • 100 -200 grams of fresh Tofu
  • 1 Avocado
  • 4 big Roman Lettuce Leaves
  • 1 Tablespoon ground Turmeric
  • 1 Tablespoon fresh Garlic
  • 1/2 Teaspoon Sea Salt
  • 1 Teaspoon Curry Powder
  • A Pinch of Fresh Coriander
  • 1 -2 Tablespoons Olive oil
  • Wooden Skewers

Instructions

  1. -Rinse the Roman Lettuce leaves and put on a plate
  2. -Slice thin pieces of Avocado and spread over the Roman Lettuce Leaves
  3. -Dice the Tofu into small cubes
  4. -Chop a pinch of fresh Coriander
  5. -Put 1-2 tablespoons of Olive Oil in a Wok and warm it up on low fire
  6. -Mix the Turmeric, Garlic, Sea Salt and Curry Powder and add to the warm oil: Rinse well!
  7. -Add the diced Tofu to the seasoning and stir fry for 2-3 minutes
  8. -Add the chopped fresh Coriander just before turning of the fire
  9. -Spread the fried Tofu over the Lettuce leaves
  10. -Roll the Lettuce leaves carefully and stick them together using wooden skewers
  11. Add to your Lunchbox and make your colleagues jealous during Lunchtime!

Vegan Sandwich with Sunflower Seeds Spread and Sun dried Tomatoes

For delicious sandwiches I recommend Spelt Bread because it is very healthy and it fills your stomach much better than cheaper bread! Of course it's up to you what kind of bread you use!

The total time is longer because you have to soak the Sunflower Seeds, so don't let this scare you of! You can relax in front of the TV while waiting till you're ready to continue!

Cook time: 4 hours 10 min
Ready in: 4 hours 10 min
Yields: 4 sandwiches

Ingredients

  • 4 slices of Spelt Bread
  • 200 grams of Sunflower Seeds
  • 1 -2 Tablespoon(s) of Tahin
  • 2 Tablespoons of Olive Oil
  • 1/2 Teaspoon of Fresh Basil
  • 4 Tablespoons of Sun dried Tomatoes
  • 1 Teaspoon of Fresh Garlic
  • 1 Teaspoon of ground Turmeric
  • a Pinch of Sea Salt and Pepper

Instructions

  1. -Soak the Sunflower Seeds in water for 3-4 hours
  2. -When done soaking put 1 tablespoon of olive oil in a frying pan
  3. -Add the soaked Sunflower Seeds, Garlic, Turmeric, Sea Salt and Pepper to the pan and roast for 2 minutes
  4. -Put the roasted mix in your food processor/blender together with 1 tablespoon of Olive Oil, the Tahin and the Basil
  5. -When your mix is creamy spread it on a roasted sandwich
  6. -Put the sundried tomatoes on top of your spread
  7. Enjoy your sandwich!

For this lovely Hummus spread you need the following ingredients:

-1/2 cup of red Lentils

-1 big cup of water

- 2 roasted paprikas

-1 teaspoon ground Cumin

-1/2 Teaspoon ground Turmeric

-A pinch of Salt

-A pinch of Chili Powder

-2 Tablespoons of Tahini

-2 cloves of Garlic

Directions:

-Bring the Lentils to boil.

-Lower the fire and add the ground Cumin, ground Turmeric and the Sea Salt.

-Let it boil for about 20 minutes. Don't forget to stir every once in a while.

-Turn of the gas and let the Lentil mix cool down for about 10 minutes

-Put the Lentil mix together with all other ingredients in a food processor or blender and mix!

-Your Red Lentils Hummus is ready. Put in the refrigerator for an hour.

Spread the Red Lentils Hummus over your sandwich(es).

Tip: Top with a slice of tomato, Cucumber and/or some Lettuce Leaves, yummy!

Ingredients

  • Basic Hummus
  • 2 slices of Spelt Bread
  • 1 Eggplant
  • 2 large Tomatoes
  • 1 teaspoon of Fresh Garlic
  • 1 Teaspoon of Fresh Basil
  • 1 Tablespoon of Olive Oil
  • 4 large Lettuce Leaves
  • a pinch of Sea Salt and Black Pepper

Instructions

  1. -Cut 6 slices of the Eggplant
  2. -Add Olive Oil in a frying pan
  3. -Roast the Eggplant slices for about 5 minutes
  4. -Toast 4 slices of Spelt Bread and put 2 slices in your lunchbox
  5. -Spread the Hummus over the slices
  6. -Put 2 Lettuce Leaves per slice of bread on top of the Hummus
  7. -Divide the Eggplant slices on top of it
  8. -Cut tomatoes in slices and put on top of the Eggplant slices
  9. -Divide the garlic over the tomatoes
  10. -Top with the Basil, Sea Salt and Black Pepper
  11. -Add the 2 slices of toasted bread you've got left on top of it
  12. Enjoy your sandwich!
